Back bars, dry bars and conditioned wine rooms built around the equipment list: undercounter refrigeration, glass racking, integrated lighting and a counter that takes a spill without staining. Racking is cut to your bottle formats rather than a standard bin, and every run is dry-fitted in the shop before it leaves Brooklyn.
